Introducing Robert Diemar, East 33’s fifth generation Sydney Rock Oyster farmer from Port Stephens. Born with oyster farming in his blood, Robert’s family’s legacy and story soon became his own, having worked since 1972 in the industry. Robert’s intergenerational knowledge and paramount expertise marks him as one of the industry’s most regarded farmers with a renowned product.
Robert’s Oysters are characterised by a deep shell, full flavour and creamy meat. These oysters are low in umami and brine with a medium level of salinity and minerality. This is due to the two freshwater rivers that feed the Port Stephens estuary, Myall River and Karuah River. These characteristics of Robert’s Port Stephens oysters make them enjoyable throughout the season with a smooth finish on the palate.
