Originally from Western Australia, Graham's love of oyster farming started when he ventured on to the water with a friend. Once out on the pristine waters of the South Coast, Graham fell in love with the industry, and is now proud to have been farming for 10 years at Wapengo lake. His passion and dedication to aquaculture and the Sydney Rock Oyster has resulted in a product designed to be savoured.
The Southern region of East’s 149° Series is characterised by high levels of umami and seaweed with undertones of brine and sweetness. This is due to 70% of the surrounding landscape being forested producing a pristine and fresh product. Graham notes that during Autumn and Winter his oysters have a peak creaminess and an elevated depth of flavour.
