ABOUT OUR OYSTER COLLECTION
The East 33 Collection consists of oysters stretching along the entire coast of New South Wales on Australia’s east coast - from Longitude 154 degrees in the north of the state, to Longitude 149 degrees in the south. As a result, we identify the East 33 Collection by its geographic region, showcasing the complete variety of tastes, textures and delights the Sydney Rock Oyster has to offer.
154 SERIES
NORTHERN NEW SOUTH WALES
33-154s are the northern-most series in the East 33 Collection. 154s are sourced from three locations in northern New South Wales; Nambucca, Hastings River and Camden Haven. A sharp initial offering and a dry finish unites the 154s and acts as the most obvious similarities between the oysters produced at these locations. That said, the 154s are our most geographically diverse series by distance between farms. This inevitably provides the 154 Series with a wide variety of clear characteristics between locations.
NAMBUCCA

With a sharp vegetal bite and full creamy texture the Nambucca is characterised by having a long, full back palate and dry finish.
Hastings River

152 SERIES
CENTRAL NEW SOUTH WALES
33-152s are from locations in the central region of the NSW coastline, including Wallis Lake, Port Stephens and the Manning River. This region is where the majority of the oysters from the East 33 Collection are produced and sourced, with the greater balance of those coming from our Wallis Lake operation. 152s are truly our oysters for the southern hemisphere summer, as they naturally reach their peak physical condition during the warmer months.

149 SERIES
SOUTHERN NEW SOUTH WALES
33-149s are our southern-most series and perhaps most unique. The 149 Series come from three locations: Wapengo, Pambula and Merimbula. The locations that make up this 149 series are much closer in proximity to one another than those in the 154 or 152 Series. One might assume that this would result in diminished diversity in their characteristics, however nothing could be further from the truth.
