Originally from Western Australia, Graham’s love of oyster farming came through an introduction with a friend. Once out on the water, Graham fell in love with the industry and is now proud to have been farming for 10 years at Wapengo lake.
The southern region of East’s 149 Series is characterised by high levels of umami and seaweed with undertones of brine and sweetness. This is due to 70% of the surrounding landscape being forested producing a pristine and fresh product. Graham notes that during Autumn his oysters have a peak creaminess and an elevated depth of flavour.
