Mark Polson from Oxley Island is one of the region’s 2nd generation oyster farmers, having found a love for oyster farming 35 years ago that stemmed from a small shore lease. Mark’s production has continued to grow and excel, and the knowledge and cultivation of oyster farming is set to pass down to his sons.
The Manning River fosters a different and unique flavour profile, characterised by higher umami and minerality due to the surrounding land. One of Mark’s secrets to creating incredible flavour depth in his oysters is by using the Manning River as a nursery for young oysters (spat) before transferring the oysters to his leases in Wallis Lake for the final few months of growth. This results in an oyster rich in minerality and creaminess with undertones of brine and sweetness.
